I took a look at Real-Time Character Dismemberment (Game Engine Gems 1 - Chapter 19), I guess I see this technique has been used in GTA III when the player can shoot the NPC's arm off. I'm truly interested in this gore thing. Has anyone made a demo of this technique in Ogre3D? (Or Unity/CryEngine/Unreal... But I think the demo for Ogre3D is best because it's a solid open-source graphic engine, accessible for everyone)

I'm not sure about Unity but CryEngine and Unreal are open-sourced accessible to anyone and honestly more polished in my opinion than Ogre3D.  Also my google-foo must be weak-sauce as I found zero examples in any engine other than a kickstarter game G&G (Guts and Glory I believe it was) that was sorta like this.

Of course Ogre3D is just my opinion, it doesn't matter What's matter is a demo that can easily run and observe this technique in action

That's fine, just think you're pretty much out of luck as it seems it's not well documented.  Looks like you'll have to implement it yourself.  I don't know the technique myself as I only have Game Engine Gems 2-3 and not 1 (nor am I willing to pay like $250 for a copy either, Amazon price I seen when I checked it out).
