You ought to give Skyward Sword a go. My artist friend claims it's the most visually pleasing Zelda game yet; she's a huge fan of the watercolor-esqe style they went for.
If you want something more visually darker, consider Shadow of the Colossus (PS2), which I hear got remade for the PS4.
Another darker Zelda game a 'la Twilight Princess would be very nice.
