Anyone know where I could find information about the instruction sets of the CPUs of consoles (the NES for example), or just general information about emulation?

Some time ago, I downloaded some emulators from the web. If I''m correct the source code of some emulators (like coin-op emulator MAME) was made public. I don''t have any links to this anymore, but it shouldn''t be too hard to find.
