Some arcade games using the two joystick scheme:
Battlezone
Cyber Sled
T-Mek
Assault

Console:
Steel Battalion (XBox)
X-Arcade Controller (Multi)
there was a game that did this on the saturn and in arcades, i cant remember the name of it though began wuth a V i think... but it used dual joysticks for control exactly like you are talking about, was a mech fighting game now that i think about it, insanley fun.
Hmm learning OpenGL and C++ at the same time is like trying to learn french while in the middle of Paris

How about this for a game. 2 Mice! Unplug that keyboard and plug in a 2nd mouse and your good to go. LOL. Now that would be a hard game to play.

I have a better idea....

TWO KEYBOARDS!

Seriously though, I tend to be a little skeptical about game designs requiring unusual control setups. It is a good way to limit your audience to those with the hardware required.

Just out of curiousity, how do you even plug two joysticks in? Presumably you need an adaptor to plug two into the same game port.

Hehehe, couldn't resist. Some of us make games because we want everyone to play (and probably buy) them. However, some of us find making game an art. I realize that this is not something that is very popular at the time, at least in the commercial arena. I find very few allegories in killing 35 people in 2 minutes on Quake ( at least none too insightful), but some games attempt to perhaps have messages, or are a form of expression for the artist.

I say that if your goal is to make a game for the purpose of making the game itself and not for other people, then do it however you feel. If it requires 35 mice to control (hehehe, that would be crazy) then so be it. Most of my games require people to have gamepads, and that is just for 1 player mode. I make my games multiplayer, and for them to be played "in their full glory" a player needs to have 4 game pads hooked to the computer. Sure, I don't get a lot of downloads, and would have no chance of marketing my games commercially, but I am glad I haven't compromised my vision, especially on the nights when me and three of my buddies get to fly together around and blast the enemy away

If you have a vision, screw what everyone has on their computer. Make it like you see it.

Two stick controllers aren''t hard to come by. The Dual Shock controller for PS2 has ''em. My brother also has a USB computer gamepad with two analog sticks, a digital pad, six face buttons, and four wing buttons. This is definitely overkill for most games!

If worse comes to worst, remember that the joysticks in Virtual ON were digital: they were either on in a direction or off. That means that they can be simulated with two hands on a keyboard. Using my own keyboard, I can put my left hand on (from pinky to thumb) asefc and my right hand on ;lijm, to get four directions and an extra button per hand. Two actual joysticks would definitely be more comfortable, but it''ll do.
