To give you an idea on the stability of Windows 2000, I first ran my web-server on a P200 for a year and a half and it didn''t crash once. The current server is also Win2K and it has yet to crash because of Windows. WCPUID caused it to BSOD once when I tried running it and when something happened to the HD it did a BSOD. Turned out the cable on the HD just came loose probably from the constant heating and cooling going on.
Windows 2000 stability is directly related to the hardware in your system and 3rd party software.
For my network I have a single static IP with a Netgear RT311 which goes to the hub that all the systems are plugged into. The NAT is then programmed to only allow certain ports through to certain internal IPs.
