Something like a Waterfall
Hmmm... Funny you should ask that actually because the glexcess demo (www.glexcess.com) has a good looking waterfall scene which is really quite simple to do.

The way that this effect is achieved is not through one single complex mathematical formula but rather a combination of several elemental effects to produce the final output. There is a textured quad in the foreground, a textured quad in the background, an animated textured quad to simulate the water flowing towards the ground, a particle system to simulate the water splashes as it hits the ground and another animated textured quad to simulate the water flowing calmly downstream.
This is not the most amazing effect ever, but still quite an interesting approach. This is more of a bit of clever artwork rather than a bit of clever coding.
The clever coding version involves a lot of metaballs, possibly an environment map or few, some clever use of OpenGL material properties and a fat CPU
