www.flipcode.com has a tutorial on creating a 3d portal engine. Also the other day I think I saw a link here (www.gamedev.net/gamedev.asp) that linked to another 3d engine tutorial.
Books are actually your best bet. The book I would recommend is Black Art of 3D Game Programming. It explains just about everything you need to know. The only detriment is that the code is dos. But it''s still great for people who want to learn 3D, or people who are just starting off (since it also covers 2D games). If you want to learn windows game programming you should also get Tricks of The Windows Game Programming Gurus. It doesn''t cover 3D, but otherwise its great.
