I think principle is better visible here:

This would be a pretty bad implementation of double buffering. Everything is being done in real time, which kind of defeats the purpose of it. More like an example of a RAID array.

Well, look at the second video.
Where I saw the analogy mostly is, that the apparatus is being fed from the first bag, while the poor old guy has to lift the second one, and after the first one is almost empty, the bag used mainly for playing is flipped, so the thing will never run out of air (no graphical glitches by not being fast enough for vertical retrace with only one buffer) - well for a big amount of time both bags are feeding, but you get the idea :-)
