I think if done right it could be quite a niche title. But I wouldnt expect it to grab mainstream interest. Still I think it would be a great pursuit to make it if your into that sort of thing.
personally i wouldn't play or pay for it, but that's just because i don't like total stats and values within a game, i prefer to have deep customisation, options, values economy etc. but i like it to effect what i'm doing as far as graphically as well.

However, the main reason i posted was just to say like others have about the interface, i don't play economy games, but football manager handheld for the psp is similar in many ways, very deep, lots of stats with money and many different stats for each player. i love football games however after a week of playing it i just gave up. not only did i only draw 1 game and lose 6, (with no real explanation or indication of things i changed having an effect) but also i didn't really have a clue what was going on, because it was just tables with tons of different values in.

And each value heading was abbreviated, the only problem was i had no idea what something like 'had' stood for so it was pretty confusing and wasn't very fun.

Good luck. :)

Now that you mentioned it, Football Manager is a perfect example of a game that does not forgive even the smallest of mistakes, it is pretty complex and deep, it lacks any graphics, and yet it has a very large, dedicated fanbase and each following version is an instant hit. It leaves more "user-friendly" titles of the same genre like FIFA Manager etc miles behind on all the charts.

Why?
