Politics don't really have a place in games or other forms of entertainment because it's all temporary unless maybe you're making a game about that specific time period. It's just going to make your work feel super dated and out of place later on.
Unless you're making a WWII shooter or a Ukraine vs Russia war game, I think you're fine not necessarily caring too much about what's going on now.
I had this conversation with some people years ago about making a game themed on politcs on the current time and advised against it for this reason then. And yes, the politics of that time just 4 years ago are in fact not relevant today any more, as heated as things were back then. (It was related to Donald Trump and other things, imagine a game about Donald Trump now in 2022.)
I think you should totally include both so that years from now when all these conflicts are over, it won't stick out like a sore thumb in the story of your game.
Exactly, current day politics shouldn't be in games unless it's a part of the core mechanics or story.
If I read correctly this is a restaurant sim? You could include fictitious wars as a mechanic which causes food/ingredient shortages. Depending on how serious the game is. You could have a mole people revolt against the country or something like that. Therefore you dodge the can of worms that is real world politics or insulted feeling people.
If it is important to you, then I would probably try to stay as neutral as possible and treat it just like any other historical fact, since it's 2100.

Worrying about Trigger happy people who will be upset about popular culture issues is not where a game dev should be focusing their attention.
