It's probably out of print, but see if you can find The Game Production Handbook by Heather Chandler ISBN: 1-58450-416-1

And I wrote a long chapter on production in Introduction to Game Development
edited by Steve Rabin ISBN: 1-58450-377-7

There's also Game Development Essentials: Game Project Management
