I'm back in the job market, and I'm not sure if I can say I've "Shipped" a game.

Then there is no problem. "Shipped" means it is a finished game and on it's way to the store.
Some games are "shipped" but can't be sold yet.
This happens, once the game is done it's shipped it often needs to wait for legal reasons, quality check or even just held back to wait for a better release date.
It can take around 30 days for a "Shipped" game to sell it's first copy, although I have only seen such long times with Indie and Big Indie developers who did not plan for it. For example Steam takes about that time for a developer to publish there first game after it is submitted.
The reason they ask for a "shipped" game is because they don't want you to wait that 30 days to get a new job. This is mostly for Freelancers/ Contractors who work from project to project.
Development->Shipped->Released->Sold.
