i am not a native English speaker, and i am going to make a game about mines.

What do you call the process of take minerals or gemstone from deposit?

is it mining or digging or does it have a special name ?

It is called both mining and digging for ore or gems. A more technical term for the removal of something (like ore or gems or oil) from a deposit is extraction. Or, if you are digging to create a mine that could be excavation. For a more simple term for getting something from a deposit, collecting, harvesting, and gathering are all good.
