Finished a model, how do I texture, rig and animate it?

Ok, I assumed you meant cut the model in half.

Well I'm not sure what you mean by scale till they are flat? Until what is flat? The edges?
Bump and new question: When you mirror it, do you convert both sides into a single poly? And then target weld the edges?

You could simply use the symmetry modifier...
