They used to, but they got in serious trouble over it. I think it was the flight simulator that did it.
Basically big businesses and governments (especially their military) are risk-averse, they want to know exactly what is running on their systems. Easter-eggs are undocumented and unnecessary features.
Windows used to have many Easter eggs such as the windows' about screen, "Volcaones" screen saver, speech preview box, "bush hid the facts" 'bug' (only because it was so political, some call it an easter egg) and so on. I think they have all been removed and are documented in the knowledge base as bugs where the behavior is unexpected.

Though it irks me a little that people think there was just one Konami code, since there were lots of small variations. But whatever. Someday I will probably tell my kids that fact and they will roll their eyes.
