do the guess my number game!
Black & White LOL!
Only kidding
How about err...
Simple scrolly shoot-em-up or spaceinvaders
I could list all the old classics, but I ain''t gonna

A 3d version of the classic (I know I said I wasn''t gonna mention classics, but hey! I don''t think this has been done in 3d!) Scorched earth.... if you don''t know this game , then let me explain.....
There are two or more tanks on a battlefield, it is turn based and each player has to give their tank an angle at which to fire and the power at which to shoot the "bullet" so that it hits and blows to bits the enemy tank.
I think this could be cool because the 3rd dimension would add more gameplay to it (wind etc), brilliant OpenGL visuals, plus you could play around with coding simple AI, gravity etc.

If you don''t make this, I will!!!

There''s a 3D scorched earth clone for Linux; I forget it''s exact name.

How about a simple sports game, like tennis? (In 2D). Nobody does stuff like that anymore and yet they comprise all aspects of gamedev - physics, AI, graphics, input - in more manageable quantities than RPGs, RTSes and "MMO"-anythings. And they''re way cooler than Tetris or Pong.
Make paddlewar !!!!

you know, that game they had on the commander keen menu...
That was so addictive....
