I'd like to see as many different activities as possible - not just combat and crafting (although I completely agree that crafting should be its own mini-game).
Things like plant and animal breeding, a research mini-game to find new crafting recipes, a lottery, having resources worth more the further they are from the source (so the player can earn a living transporting resources to areas of need), and so on.
Allowing the player to build houses is definitely something I'd enjoy - especially if I can upload my own artwork (into a painting object for example) - so that I can create something totally unique.
The other element that I enjoy is exploring - usually just for the pleasure of sight-seeing. I think this might be difficult to achieve procedurally - for my own project I was going to have the main world placed statically so that I can control the art assets to create beautiful regions to explore - but then have defined regions ('dungeons' for want of a better word) generated procedurally to maintain some surprises for the player.
