It will be easier to find research games than commercial ones. Information on neural networks is out there, but commercial game developers (and marketers) have incentive to hide information.

Thanks Predictor I found an article about ANNs used in Colin MacRae Rally 2 on Generation5 and it was exactly what I was looking for just a simple example.
