Gamasutra had an article on game dev salaries, don''t remember the exact link, but check out their site and search.

Used to be one at http://www.thecursor.com/ but that domain is dead now.

Unless it was a large developer I am not sure they would have a specific asset manager. In most cases the Producer/Assistant Producer keep track of the assets and make sure that the IT dept do regular backups.
