Did you try the tutorials that come with gmax, I did them ages ago and they were excellent! Im not too sure if they come with gmax anymore, because I used a old version, but they probably do

I always suggest www.polycount.com. Good low poly tutorials (for Max, but most can be adapted) and an active messageboard with a lot of talent.
